2CupsCooked, Shredded Turkey Breast
6Bell Peppers, Tops Removed and Seeded
1CupPart Skim Ricotta Cheese
2CupsFresh Spinach, Chopped
1TspGarlic Powder
1/2CupGrated Parmesan Cheese
Fresh Basil Leaves for Garnish
Instructions
Preheat the oven to 375°F (190°C).
In a large bowl, mix together shredded turkey, ricotta cheese, chopped spinach, garlic powder, and Parmesan cheese.
Stuff each bell pepper with the turkey mixture, pressing down to fill evenly.
Arrange the stuffed peppers in a baking dish and bake for 20-25 minutes, or until the peppers are tender and the filling is golden brown. Garnish with fresh basil and serve warm.
