Ingredients

  • 2 Cups Cooked, Shredded Turkey Breast
  • 6 Bell Peppers, Tops Removed and Seeded
  • 1 Cup Part Skim Ricotta Cheese
  • 2 Cups Fresh Spinach, Chopped
  • 1 Tsp Garlic Powder
  • 1/2 Cup Grated Parmesan Cheese
  • Fresh Basil Leaves for Garnish

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, mix together shredded turkey, ricotta cheese, chopped spinach, garlic powder, and Parmesan cheese.
  • Stuff each bell pepper with the turkey mixture, pressing down to fill evenly.
  • Arrange the stuffed peppers in a baking dish and bake for 20-25 minutes, or until the peppers are tender and the filling is golden brown. Garnish with fresh basil and serve warm.
