1LargeCucumber, Thinly Sliced
1MediumCarrot, Julienned
1/4CupFresh Cilantro, Snipped
6TblLime Juice
2TblFish Sauce
2TspHoney
PinchRed Pepper Flakes, Optional
Instructions
In a large bowl, combine shredded turkey, cucumber, carrot, and cilantro.
In a small bowl, whisk together lime juice, fish sauce, honey, and red pepper flakes (if using) to make the dressing. Pour the dressing over the salad and toss gently to coat. Or divide the dressing by 4 and serve on the side.
Serve immediately, garnished with extra lime wedges if desired, and enjoy the bright, fresh flavors.
