2CupsCooked Shredded Turkey Breast (or chunked)
1CupCooked Orzo Pasta
1CupCherry Tomatoes, Halved, Sliced or Diced
1Cucumber, Diced
1Small or MediumRed Onion, Diced
1/2CupKalamata Olives, Pitted - Left whole or Halved
1CupCrumbled Fat Free Feta Cheese
1TblFresh Parsley, Chopped
4TblLemon Juice
2TblOlive Oil
2ClovesGarlic, Minced
Salt, Pepper to Taste
Instructions
In a large bowl, combine the cooked orzo, shredded turkey, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
In a small bowl, whisk together the lemon juice, olive oil, garlic, salt, and pepper to make the dressing.
Pour the dressing over the salad ingredients and toss gently to combine. Adjust seasoning to taste and serve chilled or at room temperature.
