Ingredients

  • 2 Cups Cooked Shredded Turkey Breast (or chunked)
  • 1 Cup Cooked Orzo Pasta
  • 1 Cup Cherry Tomatoes, Halved, Sliced or Diced
  • 1 Cucumber, Diced
  • 1 Small or Medium Red Onion, Diced
  • 1/2 Cup Kalamata Olives, Pitted - Left whole or Halved
  • 1 Cup Crumbled Fat Free Feta Cheese
  • 1 Tbl Fresh Parsley, Chopped
  • 4 Tbl Lemon Juice
  • 2 Tbl Olive Oil
  • 2 Cloves Garlic, Minced
  • Salt, Pepper to Taste

Instructions

  • In a large bowl, combine the cooked orzo, shredded turkey, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  • In a small bowl, whisk together the lemon juice, olive oil, garlic, salt, and pepper to make the dressing.
  • Pour the dressing over the salad ingredients and toss gently to combine. Adjust seasoning to taste and serve chilled or at room temperature.
