Ingredients

  • 3 Cups Black Beans, Canned Rinsed and Drained - 2 (15 oz) Cans
  • 10 oz Bag of Frozen Sweet Corn Defrosted
  • 1 Red or Green Bell Pepper Chopped
  • 1 Cucumber Seeded and Diced
  • 2 Roma or Plum Tomatoes Diced
  • .5 Onion, Medium Chopped
  • 1 Bunch Cilantro Snipped
  • 1/3 Cup Lime Juice 1/3 up to 1/2 Cup
  • 2 Cloves Garlic Minced
  • 1 Tsp Kosher Salt
  • 1/8 Tsp Cayenne Pepper
  • 1/8 Tsp Paprika
  • 1/4 Tsp Black Pepper
  • 1/8 Cup Swerve Sugar Substitute or Stevia for a Plant Based Alternative

Instructions

  • In a large bowl, add the first 7 ingredients and mix thoroughly.
  • In a separate bowl, whisk together all the remaining Sweet Lime Dressing ingredients. Gradually add the 1/8 cup of Splenda to the Dressing ingredients. Add more sugar substitute to suit your taste. Pour over salad mixture and combine well. Chill until ready to serve.
