10ozBag of Frozen Sweet CornDefrosted
1Red or Green Bell PepperChopped
1CucumberSeeded and Diced
2Roma or Plum TomatoesDiced
.5Onion, MediumChopped
1BunchCilantroSnipped
1/3CupLime Juice1/3 up to 1/2 Cup
2ClovesGarlic Minced
1TspKosher Salt
1/8TspCayenne Pepper
1/8TspPaprika
1/4TspBlack Pepper
1/8CupSwerve Sugar Substitute or Stevia for a Plant Based Alternative
Instructions
In a large bowl, add the first 7 ingredients and mix thoroughly.
In a separate bowl, whisk together all the remaining Sweet Lime Dressing ingredients. Gradually add the 1/8 cup of Splenda to the Dressing ingredients. Add more sugar substitute to suit your taste. Pour over salad mixture and combine well. Chill until ready to serve.
