Ingredients

  • 12 oz lean ground turkey
  • 6 large eggs
  • 6 egg whites
  • 1/2 cup bell pepper diced
  • 3/4 cup canned black beans drained and rinsed
  • 1/2 cup salsa
  • 1 cup reduced-fat shredded cheddar
  • 8 whole wheat tortillas 8-inch
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1/2 tsp salt

Instructions

  • Brown the turkey: Cook the turkey in a large skillet over medium-high heat for 7 to 8 minutes with the cumin, garlic powder and salt, breaking it up, until browned.
  • Move it aside: Push the turkey to one side of the skillet or transfer it to a bowl.
  • Scramble the eggs: Add the eggs, egg whites and bell pepper to the skillet and stir for 3 to 4 minutes, until just set but still soft.
  • Combine: Stir in the turkey, black beans and salsa.
  • Cool: Spread the filling on a tray and cool for 10 minutes.
  • Fill: Warm the tortillas for 15 seconds in the microwave, then add about 1/2 cup filling and 2 tablespoons cheddar to each.
  • Roll: Fold in the sides and roll each burrito tightly.
  • Wrap and freeze: Wrap each burrito in parchment and then foil or a freezer bag, and freeze.
  • Reheat: Microwave a frozen burrito wrapped in a damp paper towel for about 2 minutes, flipping halfway.
