Ingredients

  • 24 Ounces Boneless Skinless Chicken Breasts
  • 2 Tablespoons Bourbon
  • 2 Tablespoons Maple Syrup
  • 1/4 Cup Reduced Sodium Soy Sauce
  • 2 Garlic Cloves Minced
  • 3/4 Tablespoon Red Pepper Flakes
  • 1 Teaspoon Ground Ginger
  • 2 Tablespoons White Sesame Seeds
  • 4 Green Onions Snipped

Instructions

  • In a bowl, combine maple syrup, Bourbon, low-sodium soy sauce, ground ginger, garlic cloves. red pepper flakes and dried onion flakes. Stir well to combine.
  • Place the chicken breasts in a shallow dish or resealable bag. Pour the marinade over the chicken, ensuring all pieces are coated. Cover or seal the dish/bag and refrigerate for at least 4 hours, or preferably overnight, to marinate.
  • Preheat the oven to 375°F (190°C). Remove the marinated chicken from the refrigerator and transfer it to a baking dish. Arrange the chicken breasts in a single layer.
  • Pour the remaining marinade over the chicken in the baking dish.
  • Place the baking dish in the preheated oven and bake for about 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F.
  • During the last few minutes of baking, you can sprinkle sesame seeds over the chicken for added crunch and flavor.
  • Once baked, remove the chicken from the oven and let it rest for a few minutes. Then cut chicken into chunks. Set aside. Transfer the leftover marinade to a small saucepan. Bring the marinade to a boil over medium heat, then reduce the heat and let it simmer for 5-7 minutes to thicken the sauce.
  • Drizzle the thickened marinade sauce over the top of chicken. Garnish with fresh snipped green onions.
  • Enjoy your healthier version of this Golden Corral-inspired dish, complete with a flavorful homemade sauce! For those following Weight Watchers, each serving (including sauce) is 3 WW Points.
