In a bowl, combine maple syrup, Bourbon, low-sodium soy sauce, ground ginger, garlic cloves. red pepper flakes and dried onion flakes. Stir well to combine.
Place the chicken breasts in a shallow dish or resealable bag. Pour the marinade over the chicken, ensuring all pieces are coated. Cover or seal the dish/bag and refrigerate for at least 4 hours, or preferably overnight, to marinate.
Preheat the oven to 375°F (190°C). Remove the marinated chicken from the refrigerator and transfer it to a baking dish. Arrange the chicken breasts in a single layer.
Pour the remaining marinade over the chicken in the baking dish.
Place the baking dish in the preheated oven and bake for about 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F.
During the last few minutes of baking, you can sprinkle sesame seeds over the chicken for added crunch and flavor.
Once baked, remove the chicken from the oven and let it rest for a few minutes. Then cut chicken into chunks. Set aside. Transfer the leftover marinade to a small saucepan. Bring the marinade to a boil over medium heat, then reduce the heat and let it simmer for 5-7 minutes to thicken the sauce.
Drizzle the thickened marinade sauce over the top of chicken. Garnish with fresh snipped green onions.
