Ingredients
1.5CupsCooked Shredded Turkey Breast
8Rice Paper Wrappers
1Mango, Sliced or Diced
1/2CupCarrots, Julienned
1/4CupFresh Mint Leaves, Optional
1/4CupFresh Cilantro, Snipped
Peanut Dipping Sauce, for serving
Instructions
Fill a shallow dish with warm water. Dip each rice paper wrapper into the water for about 10-15 seconds, until softened.
Lay the softened wrapper on a clean surface and layer with shredded turkey, mango,, julienned carrots, mint, and cilantro.
Fold the bottom of the wrapper over the filling, then fold in the sides, and roll up tightly.
Repeat with remaining wrappers and ingredients. Serve with peanut dipping sauce on the side and enjoy the fresh flavors!
