Ingredients

  • 1.5 Cups Cooked Shredded Turkey Breast
  • 8 Rice Paper Wrappers
  • 1 Mango, Sliced or Diced
  • 1/2 Cup Carrots, Julienned
  • 1/4 Cup Fresh Mint Leaves, Optional
  • 1/4 Cup Fresh Cilantro, Snipped
  • Peanut Dipping Sauce, for serving

Instructions

  • Fill a shallow dish with warm water. Dip each rice paper wrapper into the water for about 10-15 seconds, until softened.
  • Lay the softened wrapper on a clean surface and layer with shredded turkey, mango,, julienned carrots, mint, and cilantro.
  • Fold the bottom of the wrapper over the filling, then fold in the sides, and roll up tightly.
  • Repeat with remaining wrappers and ingredients. Serve with peanut dipping sauce on the side and enjoy the fresh flavors!
