1Packet Active Dry YeastAbout 2 1/4 Teaspoons
1TspSugar
1.5CupsWarm Water110 Degrees Fahrenheit
2.5CupsAll Purpose Flour
3/4TspSalt
1TblOlive Oil
Olive Oil Cooking Spray
1TblFresh RosemaryChopped or Broken
Instructions
In a bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy.
In a large mixing bowl, whisk together 2 1/2 cups of flour and 3/4 teaspoon of salt. Pour in the yeast mixture and 1 tablespoon of olive oil. Stir until just combined; the dough will be sticky.
Cover the bowl with plastic wrap and let it rise at room temperature for 12-18 hours, or until the dough has doubled in size.
Preheat the oven to 450°F (232°C). Place a piece of parchment paper in a 13 x 9 baking dish and spray it with olive oil vegetable spray.
Carefully transfer the risen dough to the prepared baking dish. Use a spatula or your hands (preferred) to spread it evenly.
Lightly spray the top of the dough with olive oil vegetable spray and then sprinkle with the rosemary.
Bake for 20-25 minutes or until the focaccia is golden brown and has a crisp crust. Allow it to cool for a few minutes before slicing and serving.
