Ingredients

  • 2 Tbl Almond Flour
  • 1 Scoop Orgain Vanilla Powder
  • 2 Tbl Shredded Zucchini (Squeezed to remove water)
  • 1 Tbl Lakanto Monkfruit Sweetener
  • 1/4 Tsp Baking Powder
  • 1/4 Tsp Ground Cinnamon
  • 1 Large Egg
  • 2 Tbl Unsweetened Almond Milk

Cinnamon Yogurt GLaze

  • 2 Tbl Plain Nonfat Greek Yogurt
  • 1/2 Tsp Ground Cinnamon
  • 1 Tsp Lakanto Powdered Sweetener

Instructions

  • In a microwave-safe mug, combine almond flour, vanilla protein powder, shredded zucchini, monkfruit sweetener, baking powder, and ground cinnamon. Add the egg and almond milk, stirring until a smooth batter forms. Make sure the zucchini is evenly distributed.
  • Microwave on high for 60-90 seconds, or until the cake is set but still moist. Let it cool slightly. For the glaze, mix the Greek yogurt, ground cinnamon, and powdered sweetener in a small bowl until smooth.
  • Drizzle the cinnamon yogurt glaze over the mug cake. Serve immediately and enjoy the cozy, protein-packed flavors!
