Watermelon Steak Salad – One of the Best Watermelon Salad Recipes for Summer

Ingredients

  • 1.5 lbs London Broil, Flank or Sirloin Steak
  • 6 cups Mixed Greens or Arugula
  • 4 cups Fresh Seedless Watermelon, Cubed
  • 1 large Cucumber, Thinly Sliced or Diced
  • 1/2 medium Red Onion, Thinly Sliced or Diced
  • 1 cup Fat Free Feta Cheese
  • 1/4 cup Each of Fresh Basil and Mint Leaves, Torn
  • 1/3 cup Toasted Pumpkin Seeds
  • Salt/Pepper to Taste
  • 1 Tbl Olive Oil (for grilling)

For the Dressing

  • 1/3 Cup Olive Oil
  • 3 Tbl Balsamic Vinegar
  • 1 Tbl Honey Substitute or Regular Honey
  • 1 Tsp Dijon Mustard
  • Salt/Pepper to Taste

Instructions

  • Grill the Steak Preheat your grill or grill pan to medium-high heat. Rub the steak with olive oil, salt, and pepper. Grill for 4–6 minutes per side, depending on thickness and desired doneness. Let rest 5 minutes, then slice thinly against the grain.
  • Make the Dressing In a small bowl, whisk together olive oil, balsamic vinegar, honey substitute, Dijon mustard, salt, and pepper until emulsified.
  • Assemble the Salad On a large platter or in a bowl, arrange the arugula or mixed greens. Top with cubed watermelon, cucumber slices, red onion, and crumbled feta. Lay sliced steak across the top.
  • Garnish and Dress Sprinkle with fresh basil, mint leaves, and toasted pumpkin seeds. Drizzle with balsamic vinaigrette just before serving.
