1.5lbsLondon Broil, Flank or Sirloin Steak
6cupsMixed Greens or Arugula
4cupsFresh Seedless Watermelon, Cubed
1largeCucumber, Thinly Sliced or Diced
1/2mediumRed Onion, Thinly Sliced or Diced
1cupFat Free Feta Cheese
1/4cupEach of Fresh Basil and Mint Leaves, Torn
1/3cupToasted Pumpkin Seeds
Salt/Pepper to Taste
1TblOlive Oil (for grilling)
For the Dressing
1/3CupOlive Oil
3TblBalsamic Vinegar
1TblHoney Substitute or Regular Honey
1TspDijon Mustard
Salt/Pepper to Taste
Instructions
Grill the Steak Preheat your grill or grill pan to medium-high heat. Rub the steak with olive oil, salt, and pepper. Grill for 4–6 minutes per side, depending on thickness and desired doneness. Let rest 5 minutes, then slice thinly against the grain.
Make the Dressing In a small bowl, whisk together olive oil, balsamic vinegar, honey substitute, Dijon mustard, salt, and pepper until emulsified.
Assemble the Salad On a large platter or in a bowl, arrange the arugula or mixed greens. Top with cubed watermelon, cucumber slices, red onion, and crumbled feta. Lay sliced steak across the top.
