A creamy, high-protein casserole made with seasoned ground turkey, black beans, and cottage cheese baked under a golden layer of melted reduced-fat cheese. It scoops out thick and cheesy like classic comfort food while still staying budget-friendly and protein packed.
Preheat oven to 375°F. Heat Olive Oil in a skillet over medium heat.
Add the Ground Turkey and cook until browned, breaking it apart as it cooks. Season with Garlic Powder, Onion Powder, Paprika, Salt, and Black Pepper and cook another minute.
In a large bowl combine the Cooked Turkey, Black Beans, Cottage Cheese, Eggs, and Panko Breadcrumbs. Stir until everything is evenly mixed.
Transfer the mixture into a small casserole or baking dish and spread evenly. Sprinkle the Reduced Fat Mozzarella Cheese over the top.
Bake for 25–30 minutes until the cheese is melted and golden and the casserole is set. Let it rest 5 minutes before scooping. Garnish with Chopped Parsley if desired.
