Ingredients

  • 2 Tbl Almond Flour
  • 1 Scoop Orgain Vanilla Powder
  • 1 Tbl Lakanto Monkfruit Sweetener
  • 1/4 Tsp Baking Powder
  • 4 Strawberries, Sliced or Diced
  • 1 Large Egg
  • 2 Tbl Unsweetened Almond Milk

Whipped Greek Yogurt Cream

  • 2 Tbl Plain Nonfat Greek Yogurt
  • 1/2 Tsp Vanilla Extract
  • 1 Tsp Lakanto Powdered Sugar Sweetener

Instructions

  • In a microwave-safe mug, combine almond flour, vanilla protein powder, monkfruit sweetener, and baking powder. Add the egg and almond milk, stirring until the batter is smooth. Gently fold in the diced strawberries.
  • Microwave on high for 60-90 seconds, or until the cake is set but still moist. Let it cool slightly.
  • For the whipped cream, mix the Greek yogurt, vanilla extract, and powdered sweetener in a small bowl until light and creamy.
  • Spread or pipe the whipped Greek yogurt cream over the mug cake. Garnish with fresh strawberry slices Serve immediately for a fresh, protein-packed dessert!
