Ingredients

  • 2 Tbl Almond Flour
  • 1 Scoop Orgain Vanilla Protein Powder
  • 1 Tbl Pistachio Butter
  • 1 Tbl Lakanto Monkfruit Sweetener
  • 1/2 Tsp Matcha Powder or 2 Drops Natural Green Food Coloring
  • 1/4 Tsp Baking Powder
  • 1 Large Egg
  • 2 Tbl Unsweetened Almond Milk

White Chocolate Ganache Topping

  • 1 Tbl Lily's Sugar Free White Chocolate Chips
  • 1 Tbl Heavy Cream

Instructions

  • In a microwave-safe mug, combine almond flour, vanilla protein powder, pistachio butter or ground pistachios, monkfruit sweetener, matcha powder (or food coloring), and baking powder. Add the egg and almond milk, stirring until the batter is smooth and vibrant. Ensure there are no lumps.
  • Microwave on high for 60-90 seconds, or until the cake is set but still moist. Let the cake cool slightly to allow the flavors to settle.
  • To prepare the ganache, microwave the sugar-free white chocolate chips and heavy cream in a small bowl for 10-15 seconds. Stir until smooth and glossy.
  • Drizzle the ganache lightly over the top of the mug cake. Garnish with crushed pistachios for added texture and presentation.Serve immediately and enjoy this vibrant, protein-packed dessert!
