Ingredients

  • 1 Reduced Calorie Graham Cracker Crust I used Keebler

For The Mousse

  • 2 Cups Fresh Strawberries Hulled and Diced
  • 1/4 Cup Water
  • 1 Envelope Unflavored Gelatin About 1 Tablespoon
  • 1/4 Cup Cold Water
  • 1/4 Cup No Calorie Sugar Substitute I use Splenda
  • 1 Tsp Vanilla Extract
  • 1 Cup Fat Free Plain Greek Yogurt I use Fage
  • 1 Cup Fat Free Cool Whip

Instructions

  • In a saucepan, combine the diced strawberries and 1/4 cup of water. Cook over medium heat until the strawberries are soft and the mixture is slightly thickened (about 5-7 minutes).
  • In a small bowl, sprinkle the gelatin over 1/4 cup of cold water and let it sit for a minute to bloom.
  • Add the bloomed gelatin to the warm strawberry mixture and stir until the gelatin is completely dissolved. Remove it from heat.
  • Stir in the sugar substitute and vanilla extract. Allow the strawberry mixture to cool to room temperature.
  • In a separate bowl, whisk together the Greek yogurt until smooth. Fold the yogurt into the cooled strawberry mixture
  • Gently fold in the light whipped topping until well combined.

To Assemble The Pie

  • Pour the strawberry mousse mixture over the graham cracker crust.
  • Smooth the top with a spatula.
  • Refrigerate the pie for at least 4 hours or until it is set.
  • Add additional sliced strawberries on the side and more cool whip, if you want to.
  • This makes 6 big fluffy slices of pie. Each slice is only 6 WW Points!!!! Enjoy!
