In a saucepan, combine the diced strawberries and 1/4 cup of water. Cook over medium heat until the strawberries are soft and the mixture is slightly thickened (about 5-7 minutes).
In a small bowl, sprinkle the gelatin over 1/4 cup of cold water and let it sit for a minute to bloom.
Add the bloomed gelatin to the warm strawberry mixture and stir until the gelatin is completely dissolved. Remove it from heat.
Stir in the sugar substitute and vanilla extract. Allow the strawberry mixture to cool to room temperature.
In a separate bowl, whisk together the Greek yogurt until smooth. Fold the yogurt into the cooled strawberry mixture
Gently fold in the light whipped topping until well combined.
