Lemony Roasted Cauliflower Salad - Healthy Vegan Summer Dinner Recipe

Ingredients

  • 2 Heads Cauliflower (Large) Cut into Florets
  • 2 Large Onions, Thinly Sliced
  • 1/4 Cup Olive Oil
  • 4 Cloves Garlic, Minced
  • 2 Tablespoons Lemon Juice
  • 2 Teaspoons Ground Cumin
  • 1 Teaspoon Paprika
  • Salt/Pepper to Taste
  • 1/2 Cup Fresh Parsley, Chopped

Instructions

  • Preheat your oven to 425°F (220°C) and line two large baking sheets with parchment paper.
  • In a large mixing bowl, combine the cauliflower florets, sliced onions, olive oil, minced garlic, lemon juice, ground cumin, paprika, salt, and pepper. Toss everything together until the cauliflower and onions are evenly coated with the seasonings.
  • Spread the cauliflower and onion mixture evenly on the prepared baking sheets. Make sure to arrange them in a single layer so they roast evenly.
  • Roast the vegetables in the preheated oven for about 25-30 minutes or until the cauliflower is tender and lightly browned, tossing them once or twice during the cooking process for even browning.
  • Once the cauliflower is roasted to perfection, remove the baking sheets from the oven and let the vegetables cool for a few minutes.
  • Transfer the roasted cauliflower and onions to a large serving dish. Sprinkle the freshly chopped parsley over the top.
  • Serve the dish warm as a tasty and healthy side dish or even as a vegetarian main course. It pairs well with grilled meats, rice, quinoa, or can be enjoyed on its own.
