Jalapeño Popper Chicken Protein Bake

This high protein jalapeño popper chicken bake is loaded with shredded chicken, melted cheese, diced jalapeños and a creamy Greek yogurt sauce. It’s a rich, satisfying dinner that delivers bold flavor while packing in plenty of protein.

Ingredients

  • 4 Cups Shredded Rotisserie Chicken
  • 6 Ounces Reduced Fat Cream Cheese, Softened
  • 1 Cup Plain Fat Free Greek Yogurt
  • 1.5 Cups Shredded Cheddar Cheese
  • 1/2 Cup Shredded Mozzarella Cheese
  • 3 Fresh Jalapenos, Diced
  • 2 Green Onions, Sliced
  • 1 Tsp Garlic Powder
  • 1/2 Tsp Onion Powder
  • 1/2 Tsp Black Pepper
  • 1/4 Tsp Salt

Instructions

  • Preheat oven to 375°F.
  • In a large bowl, mix cream cheese and Greek yogurt until smooth. Stir in garlic powder, onion powder, salt and pepper. Add shredded chicken, diced jalapeños and half of the cheddar cheese. Mix until everything is evenly coated.
  • Spread the mixture into a baking dish. Top with remaining cheddar and mozzarella cheese.
  • Bake for 25 minutes until hot and bubbly. Sprinkle green onions over the top before serving.
