Ingredients

  • 4 Cups Cauliflower Florets
  • 2 Cups Chopped Kale
  • 1 Tbl Olive Oil
  • 1 Medium Onion, Finely Chopped
  • 2 Cloves Garlic, Minced
  • Salt/Pepper to Taste
  • 1/2 Cup Low Fat Milk
  • 2 Tbl Chopped Fresh Chives or Use Dried

Instructions

  • Steam or boil the cauliflower until tender. Drain well.
  • In a large pan, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until softened.
  • Add the chopped kale to the pan and sauté until it wilts.
  • Mash the cooked cauliflower using a potato masher or blend it in a food processor for a smoother texture.
  • Mix the mashed cauliflower with the sautéed vegetables in the pan.
  • Gradually add the milk while stirring to achieve the desired consistency. Season with salt and pepper to taste.
  • Continue to cook and stir until everything is well combined and heated through. If you like, sprinkle chopped fresh chives on top for added flavor.
  • This makes 4 servings at about 1 cup serving per person. On Weight Watchers each serving is 2 WW Points. Enjoy!
