Ingredients

  • 1/4 Cup Land O'Lakes Light Whipped Butter Softened
  • 1/4 Cup Unsweetened Applesauce
  • 1/4 Cup Lakanto Monkfruit Sweetener
  • 1 Tsp Lemon Zest Grated
  • 1 Tbl Lemon Juice (from the same Lemon)
  • 1 Cup Almond Flour
  • 4 Tsp Rainbow Confetti Sprinkles

Instructions

  • In a mixing bowl, cream together the softened butter, unsweetened applesauce, and Lakanto Sweetener until well combined.
  • Stir in the lemon zest and freshly squeezed lemon juice.
  • Gradually mix in the almond flour until a dough forms. Adjust the sweetness to your liking by adding more sugar substitute if necessary.
  • Roll the cookie dough into bite-sized balls and then roll them in the rainbow sprinkles for added sweetness and a slight crunch. Or scoop out 4 separate 1/4 cup servings and divide sprinkles among them evenly.
  • Refrigerate the dough for at least 30 minutes before serving.
  • This makes 4 (1/4 Cup Servings) and is 8 Weight Watchers Points per serving. Enjoy!
