Instructions
In a mixing bowl, cream together the softened butter, unsweetened applesauce, and Lakanto Sweetener until well combined.
Stir in the lemon zest and freshly squeezed lemon juice.
Gradually mix in the almond flour until a dough forms. Adjust the sweetness to your liking by adding more sugar substitute if necessary.
Roll the cookie dough into bite-sized balls and then roll them in the rainbow sprinkles for added sweetness and a slight crunch. Or scoop out 4 separate 1/4 cup servings and divide sprinkles among them evenly.
