Preheat your oven to 400°F. Line a rimmed sheet pan with parchment paper and lightly spray with olive oil spray.
Heat a nonstick skillet over medium heat. Add the ground beef and cook until browned and crumbly. Season with taco seasoning, garlic powder, onion powder, salt, and pepper. Drain any excess moisture if needed.
Lay three tortillas on the prepared sheet pan, slightly overlapping to create a base. Evenly spread the seasoned ground beef over the tortillas. Sprinkle the shredded cheese evenly over the beef. Place the remaining tortillas on top, lining them up as best you can to cover the filling. Lightly spray the tops of the tortillas with olive oil spray.
Bake for 20–25 minutes, or until the top tortillas are lightly golden and crisp. Remove from the oven and let rest for 5 minutes. Slice into four large squares. Top each portion with shredded lettuce, diced tomatoes, and a spoonful or drizzle of Greek yogurt.
