Preheat Air Fryer to 375 degrees.
Prepare the Chicken
Season the chicken breasts with salt and pepper. Lay each chicken breast flat and place 2 slices of reduced-fat Swiss cheese and two slices of lean deli ham on top. Roll up the chicken breasts tightly, securing with toothpicks if needed.
In three shallow dishes, arrange the whole wheat flour in the first, beaten eggs in the second, and a mixture of whole wheat panko with grated Parmesan cheese in the third.
Roll each chicken roll in the flour, dip it into the beaten eggs, and coat it evenly with the breadcrumb mixture.
Air Fryer the Chicken
Lightly spray the air fryer basket with cooking spray. Place the breaded chicken rolls in the air fryer basket, ensuring they are not touching.
Air fry the chicken rolls for about 20-25 minutes, turning halfway through, until the chicken is cooked through and the coating is golden brown and crispy.
While the chicken is cooking, you can prepare your sandwiches. Optionally, spread light mayonnaise and Dijon mustard on the light potato bread slices.
