Ingredients

  • 4 Boneless Skinless Chicken Breasts
  • Salt/Pepper to Taste
  • 8 Slices Thin Swiss Cheese (I Use Sargento Thin Swiss)
  • 8 Slices Lean Deli Ham
  • 1/3 Cup Whole Wheat Flour
  • 2 Large Eggs Beaten
  • 2/3 Cup Whole Wheat Panko Crumbs
  • 1/2 Cup Reduced Fat Grated Parmesan Cheese
  • 8 Slices 647 Bread - I Use Potato
  • Mayonnaise and/or Dijon Mustard, Optional
  • Lettuce/Tomato, Optional
  • Vegetable Cooking Spray

Instructions

  • Preheat Air Fryer to 375 degrees.

Prepare the Chicken

  • Season the chicken breasts with salt and pepper. Lay each chicken breast flat and place 2 slices of reduced-fat Swiss cheese and two slices of lean deli ham on top. Roll up the chicken breasts tightly, securing with toothpicks if needed.
  • In three shallow dishes, arrange the whole wheat flour in the first, beaten eggs in the second, and a mixture of whole wheat panko with grated Parmesan cheese in the third.
  • Roll each chicken roll in the flour, dip it into the beaten eggs, and coat it evenly with the breadcrumb mixture.

Air Fryer the Chicken

  • Lightly spray the air fryer basket with cooking spray. Place the breaded chicken rolls in the air fryer basket, ensuring they are not touching.
  • Air fry the chicken rolls for about 20-25 minutes, turning halfway through, until the chicken is cooked through and the coating is golden brown and crispy.
  • While the chicken is cooking, you can prepare your sandwiches. Optionally, spread light mayonnaise and Dijon mustard on the light potato bread slices.
  • Once the chicken is done, remove the toothpicks and slice each roll into 1/2-inch thick rounds.
  • Assemble your sandwiches by toasting the bread and place the sliced chicken cordon bleu on the light potato bread slices. Add lettuce and tomato slices if desired.
  • This makes 4 servings. On Weight Watchers, each sandwich will be 12 Points.
