Instructions

For The Dough

  • Place almond milk, eggs, unsweetened applesauce, whole wheat pastry flour, salt, Lakanto Sugar Substitute, and yeast in the pan of a bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
  • Remove from your bread machine and place dough in a bowl covered with plastic wrap in a warm spot. When dough has doubled in size, turn it out onto a lightly floured surface. Cover it with a kitchen towel or plastic wrap and let it rest for 10 minutes.
  • Roll dough on a lightly floured surface to a 15 x 15 inch rectangle.

For The Cinnamon Filling

  • Combine Lakanto Brown Sugar Substitute and cinnamon in a small bowl. Spread softened butter over the dough, then sprinkle cinnamon-sugar mixture evenly over top.
  • Preheat the oven to 350 degrees F (200 degrees C).
  • Starting at the longer end, roll up the dough; cut into 9 rolls. Place rolls in a 13x9 inch baking pan that has been sprayed with vegetable cooking spray or lined with Parchment Paper. Cover with a sheet of Parchment Paper loosely and let rise until nearly doubled, about 30 minutes.
  • Bake rolls in the preheated oven until golden brown, about 20 minutes. To ensure your rolls are done do this:
Toothpick Test: Insert a toothpick into the center of one of the buns. If it comes out clean or with a few moist crumbs (but not raw dough), the buns are done. If you see uncooked dough or a lot of wet batter on the toothpick, continue baking for a few more minutes and retest.
Firm to the Touch: Gently touch the top of a bun; it should feel firm and spring back slightly when pressed.

For The Icing

  • In a bowl, while the rolls are baking, beat Lakanto Confectioners' Sugar Substitute, light butter, cream cheese, vanilla, and salt until creamy.
  • Remove rolls from oven and let cool slightly for about 10 minutes. Spread icing on warm rolls before serving.
