Instructions
For The Dough
Place almond milk, eggs, unsweetened applesauce, whole wheat pastry flour, salt, Lakanto Sugar Substitute, and yeast in the pan of a bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
Remove from your bread machine and place dough in a bowl covered with plastic wrap in a warm spot. When dough has doubled in size, turn it out onto a lightly floured surface. Cover it with a kitchen towel or plastic wrap and let it rest for 10 minutes.
Roll dough on a lightly floured surface to a 15 x 15 inch rectangle.
For The Cinnamon Filling
Combine Lakanto Brown Sugar Substitute and cinnamon in a small bowl. Spread softened butter over the dough, then sprinkle cinnamon-sugar mixture evenly over top.
Preheat the oven to 350 degrees F (200 degrees C).
Starting at the longer end, roll up the dough; cut into 9 rolls. Place rolls in a 13x9 inch baking pan that has been sprayed with vegetable cooking spray or lined with Parchment Paper. Cover with a sheet of Parchment Paper loosely and let rise until nearly doubled, about 30 minutes.
Bake rolls in the preheated oven until golden brown, about 20 minutes. To ensure your rolls are done do this: Toothpick Test: Insert a toothpick into the center of one of the buns. If it comes out clean or with a few moist crumbs (but not raw dough), the buns are done. If you see uncooked dough or a lot of wet batter on the toothpick, continue baking for a few more minutes and retest.Firm to the Touch: Gently touch the top of a bun; it should feel firm and spring back slightly when pressed.
For The Icing
In a bowl, while the rolls are baking, beat Lakanto Confectioners' Sugar Substitute, light butter, cream cheese, vanilla, and salt until creamy.
Remove rolls from oven and let cool slightly for about 10 minutes. Spread icing on warm rolls before serving.
