Ingredients

For The Salad

  • 2 Boneless Skinless Chicken Breasts
  • 2 Ripe Mangos, Peeled & Cubed
  • 2 Cups Cherry Tomatoes or Grape Tomatoes, Halved
  • 1/2 Medium Onion, Thinly Sliced (Red, White, Yellow or Vidalia)
  • 8 Cups Mixed Greens

For The Chicken Glaze

  • 2 Tbl Zero Sugar Honey Substitute
  • 1 Tbl Soy Sauce
  • 1 Tbl Lime Juice
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Ginger Powder
  • Cracked Black Pepper to Taste

For The Honey Vinaigrette

  • 4 Tbl Olive Oil
  • 1.5 Tbl Zero Sugar Honey Substitute
  • 2 Tbl Apple Cider Vinegar
  • 2 Tsp Lemon Juice
  • Salt/Pepper to Taste

Instructions

Prepare the Chicken Glaze

  • In a small bowl, whisk together honey, soy sauce, lime juice, garlic powder, ginger powder and pepper. Set aside.

Prepare the Chicken

  • Season the chicken breasts with salt and pepper. Heat a skillet over medium-high heat and cook the chicken breasts until fully cooked, about 5-7 minutes per side. In the last 2 minutes of cooking, pour the prepared glaze over the chicken in the skillet .Let the chicken cook with the glaze until it thickens slightly and coats the chicken. Remove from heat and let the chicken cool before slicing into thin strips.

Assemble Salad

  • In a large salad bowl, combine the mixed greens, cubed mango, halved cherry tomatoes, and thinly sliced onion. Add the sliced, glazed chicken on top of the salad. Combine.

Prepare the Honey Vinaigrette

  • In a small bowl, whisk together the olive oil, honey, apple cider vinegar, lemon juice, salt, and pepper. Adjust the seasoning to taste. Pour over salad and toss to combine.
