2Ripe Mangos, Peeled & Cubed
2CupsCherry Tomatoes or Grape Tomatoes, Halved
1/2MediumOnion, Thinly Sliced (Red, White, Yellow or Vidalia)
8CupsMixed Greens
For The Chicken Glaze
2TblZero Sugar Honey Substitute
1TblSoy Sauce
1TblLime Juice
1/2TspGarlic Powder

For The Honey Vinaigrette
4TblOlive Oil
1.5TblZero Sugar Honey Substitute

Instructions
Prepare the Chicken Glaze
In a small bowl, whisk together honey, soy sauce, lime juice, garlic powder, ginger powder and pepper. Set aside.
Prepare the Chicken
Season the chicken breasts with salt and pepper. Heat a skillet over medium-high heat and cook the chicken breasts until fully cooked, about 5-7 minutes per side. In the last 2 minutes of cooking, pour the prepared glaze over the chicken in the skillet .Let the chicken cook with the glaze until it thickens slightly and coats the chicken. Remove from heat and let the chicken cool before slicing into thin strips.
Assemble Salad
In a large salad bowl, combine the mixed greens, cubed mango, halved cherry tomatoes, and thinly sliced onion. Add the sliced, glazed chicken on top of the salad. Combine.
Prepare the Honey Vinaigrette
In a small bowl, whisk together the olive oil, honey, apple cider vinegar, lemon juice, salt, and pepper. Adjust the seasoning to taste. Pour over salad and toss to combine.
