Ingredients

For The Chicken Breasts

  • 4 Boneless Skinless Chicken Breasts
  • Olive Oil Cooking Spray
  • 1 Teaspoon Olive Oil
  • 1.5 Teaspoons Dried Italian Seasoning
  • Salt/Pepper to Taste

For The Tomato Sauce

  • 2 Cups Tomato Sauce Homemade or Low Sodium (Preferably)
  • 1 Teaspoon Olive Oil
  • 3 Cloves Garlic Minced
  • 1/2 Tsp Dried Oregano
  • Salt/Pepper to Taste
  • Sugar Substitute To Taste

For The Cheesy Topping

  • 1 Cup Fat Free Mozzarella Cheese I Use Kraft or Use Part-Skim Mozzarella
  • 1/4 Cup Reduced Fat Grated Kraft Parmesan Cheese
  • Fresh Herbs, Optional for Garnish Use Basil, Thyme, Rosemary, Parsley etc.

Instructions

  • Preheat oven to 375 degrees.

For The Chicken Breasts

  • Spray chicken breasts lightly with olive oil cooking spray. Season both sides of the chicken with salt, pepper, and the dried Italian seasoning. Ensure the seasoning is evenly distributed.
  • Spray a skillet with olive oil cooking spray over medium high heat. When hot, add in 1 teaspoon of olive oil. Add chicken breasts and lightly sear on each side for 2-3 minutes or until they are light brown. Set aside.
  • Next spray a baking dish with olive oil cooking spray and add in a bit of tomato sauce (recipe below). Add in seared chicken breasts.

For The Tomato Sauce

  • In a separate saucepan, heat a teaspoon of olive oil over medium heat.
  • Add minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in the tomato sauce and add dried oregano, salt, and pepper. Stir well and let it simmer for 5-10 minutes.

Assemble and Bake

  • Sprinkle the shredded mozzarella cheese evenly over each chicken breasts in the baking dish. Spoon the remaining tomato sauce over the cheese. Finally, sprinkle the grated Parmesan cheese over the top.
  • Place the baking dish in the preheated oven and bake for 20-25 minutes or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the cheese is bubbly and lightly browned. Garnish with fresh herbs if desired.
  • This makes 4 servings. On the Weight Watchers Plan, each serving is 2 Points. Enjoy!
