Instructions
For the Sweet Potato Fries
Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.
Peel and slice your sweet potatoes into thin, even fries.
Toss the sweet potato fries in olive oil until lightly coated. Sprinkle cornstarch over the fries and toss again for extra crispiness.
Season the fries with smoked paprika, garlic powder, salt, and pepper, ensuring even coverage. Arrange the fries in a single layer in the air fryer basket. Cook in batches if needed.
Cook for 10-12 minutes, shaking the basket halfway through cooking. Remove from the air fryer, let them cool slightly, and sprinkle with extra salt if desired.
For the Chipotle Dipping Sauce
Mix together the Greek yogurt, mayonnaise, chipotle chili powder, maple syrup, lime juice, and salt in a small bowl until smooth. Chill for 10 minutes in the fridge to allow the flavors to meld together before serving.
