Ingredients

For the Sweet Potato Fries

  • 2 Large Sweet Potatoes, peeled and cut into thin, uniform fries (about ¼-inch thick)
  • 1 Tbl Olive Oil
  • 1 Tsp Cornstarch
  • 1 Tsp Smoked Paprika
  • 1/2 Tsp Garlic Powder
  • Salt/Pepper to Taste

For the Chipotle Dipping Sauce

  • 1/2 Cup Plain Fat Free Greek Yogurt
  • 1 Tbl Mayonnaise
  • 1 Tsp Chipotle Chili Powder
  • 1 Tbl Maple Syrup
  • 1 Tsp Lime Juice
  • 1 Pinch Salt

Instructions

For the Sweet Potato Fries

  • Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.
  • Peel and slice your sweet potatoes into thin, even fries.
  • Toss the sweet potato fries in olive oil until lightly coated. Sprinkle cornstarch over the fries and toss again for extra crispiness.
  • Season the fries with smoked paprika, garlic powder, salt, and pepper, ensuring even coverage. Arrange the fries in a single layer in the air fryer basket. Cook in batches if needed.
  • Cook for 10-12 minutes, shaking the basket halfway through cooking. Remove from the air fryer, let them cool slightly, and sprinkle with extra salt if desired.

For the Chipotle Dipping Sauce

  • Mix together the Greek yogurt, mayonnaise, chipotle chili powder, maple syrup, lime juice, and salt in a small bowl until smooth. Chill for 10 minutes in the fridge to allow the flavors to meld together before serving.
