Ingredients

  • 4 Slices Center Cut Bacon, Chopped
  • 1 Onion, Chopped
  • 2 Cloves Garlic, Minced
  • 3 Cups Pumpkin Puree
  • 4 Cups Chicken Broth
  • 1/2 Cup Fat Free Half and Half
  • 1/2 Tsp Ground Nutmeg
  • Salt/Pepper to Taste
  • Fresh Chives, Optional for Garnish

Instructions

  • In a large pot, cook bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot. Add onion and garlic to the pot and cook until softened.
  • Stir in pumpkin puree and chicken broth. Bring to a simmer and cook for 15 minutes. Use an immersion blender to puree the soup until smooth, or carefully transfer to a blender in batches.
  • Stir in fat-free half and half and nutmeg, and season with salt and pepper. Serve topped with crispy bacon and fresh chives.
