Ingredients

  • 2 lbs Boneless, Skinless Chicken Breast
  • 3/4 Tsp Salt
  • 1/2 Tsp Pepper
  • 1/2 Tsp Garlic Powder
  • 1 Tbl Olive Oil or Light Butter

Cheese Sauce

  • 3 Cloves Garlic, Minced
  • 3/4 Cup Fat Free Chicken Broth
  • 3/4 Cup Fat Free Half and Half
  • 5 Ounces Boursin (Garlic and Herb Cheese)
  • 2 Tbl Grated Parmesan Cheese
  • 1 Tbl Fresh Parsley, Optional

Instructions

  • Pat chicken dry with paper towels. If using thick chicken breasts, slice them in half horizontally to create thinner cutlets. Season both sides with salt, pepper, and garlic powder.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 4–6 minutes per side (depending on thickness) until golden brown and mostly cooked through. Transfer chicken to a plate.
  • Reduce heat to medium. Add minced garlic to the skillet and cook for 30 seconds, stirring so it doesn’t burn.
  • Pour in chicken broth and scrape up any browned bits from the bottom of the pan (this adds tons of flavor).
  • Stir in half-and-half. Add the garlic & herb cheese and stir/whisk until melted and smooth. Stir in Parmesan (if using).
  • Return chicken to the skillet and spoon sauce over the top. Simmer gently for 3–5 minutes until chicken is cooked through and sauce thickens.
  • Sprinkle with chopped parsley and a little extra black pepper if desired. Serve hot.
  • This makes 4 servings. Each serving is 9 WW Points. Enjoy!
