Ingredients
2lbsBoneless, Skinless Chicken Breast
3/4TspSalt
1/2TspPepper
1/2TspGarlic Powder
1TblOlive Oil or Light Butter
Cheese Sauce
3ClovesGarlic, Minced
3/4CupFat Free Chicken Broth
3/4CupFat Free Half and Half
5OuncesBoursin (Garlic and Herb Cheese)
2TblGrated Parmesan Cheese
1TblFresh Parsley, Optional
Instructions
Pat chicken dry with paper towels. If using thick chicken breasts, slice them in half horizontally to create thinner cutlets. Season both sides with salt, pepper, and garlic powder.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 4–6 minutes per side (depending on thickness) until golden brown and mostly cooked through. Transfer chicken to a plate.
Reduce heat to medium. Add minced garlic to the skillet and cook for 30 seconds, stirring so it doesn’t burn.
Pour in chicken broth and scrape up any browned bits from the bottom of the pan (this adds tons of flavor).
Stir in half-and-half. Add the garlic & herb cheese and stir/whisk until melted and smooth. Stir in Parmesan (if using).
Return chicken to the skillet and spoon sauce over the top. Simmer gently for 3–5 minutes until chicken is cooked through and sauce thickens.
Sprinkle with chopped parsley and a little extra black pepper if desired. Serve hot.
