Ingredients
1.5lbsboneless skinless chicken breast
2canswhite beans, drained and rinsed
1cupplain fat free Greek yogurt
1mediumonion or shallots, diced
4clovesgarlic, minced
olive oil cooking spray
1/2cupfat free chicken broth
2tblfresh lemon juice
1tspdried oregano
1tspdried thyme
1/2tsppaprika
salt/pepper to taste
Optional: chopped fresh parsley or dried thyme as garnish
Optional: grated parmesan or reggano cheese for topping.
Instructions
Lightly spray or coat crockpot insert with cooking spray. Add diced onion (or shallots) and minced garlic to the bottom.
Pat chicken breasts dry and season both sides with salt, pepper, oregano, thyme, and paprika. Place chicken over the onions and garlic. Add drained white beans, then pour in broth and lemon juice.
Cover and cook on LOW 4–5 hours or HIGH 2–3 hours until chicken is fully cooked and tender.
Remove chicken, shred with two forks, and return to crockpot. Stir in Greek yogurt until sauce is creamy. Taste and adjust seasoning. Garnish with fresh herbs if using, before serving.
