Ingredients

  • 1.5 lbs boneless skinless chicken breast
  • 2 cans white beans, drained and rinsed
  • 1 cup plain fat free Greek yogurt
  • 1 medium onion or shallots, diced
  • 4 cloves garlic, minced
  • olive oil cooking spray
  • 1/2 cup fat free chicken broth
  • 2 tbl fresh lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • salt/pepper to taste
  • Optional: chopped fresh parsley or dried thyme as garnish
  • Optional: grated parmesan or reggano cheese for topping.

Instructions

  • Lightly spray or coat crockpot insert with cooking spray. Add diced onion (or shallots) and minced garlic to the bottom.
  • Pat chicken breasts dry and season both sides with salt, pepper, oregano, thyme, and paprika. Place chicken over the onions and garlic. Add drained white beans, then pour in broth and lemon juice.
  • Cover and cook on LOW 4–5 hours or HIGH 2–3 hours until chicken is fully cooked and tender.
  • Remove chicken, shred with two forks, and return to crockpot. Stir in Greek yogurt until sauce is creamy. Taste and adjust seasoning. Garnish with fresh herbs if using, before serving.
