1.5PoundsLump Crabmeat (Picked over to remove shells)
1/2CupLight Mayonnaise
1/2CupPlain Nonfat Greek Yogurt
1/2CupCelery, Diced
1/4CupRed Bell Pepper, Diced
2TblLemon Juice
3TspDijon Mustard

Instructions
In a large bowl, combine the lump crabmeat, diced celery, diced red bell pepper, and chopped parsley.
In a separate bowl, whisk together the light mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and pepper until well combined.
Gently fold the mayonnaise mixture into the crabmeat mixture until everything is evenly coated. Be careful not to break up the crabmeat too much
Slice the rolls in half horizontally, creating tops and bottoms.
To prevent the rolls from getting soggy, you have a couple of options:Option 1: Serve the crab salad in a separate bowl or container alongside the rolls. Allow your guests to assemble their own sandwiches to maintain freshness.Option 2: Spread a thin layer of butter or a light condiment (like mustard or mayonnaise) on the inside of each roll to act as a moisture barrier before adding the crab salad.
