Creamy Chinese-Style Chicken Smash Filling (High-Protein & Meal Prep Friendly)

Ingredients

  • 2 Cans Canned Chicken, Drained (12.5 oz Cans)
  • 1/2 Cup Plain Greek Yogurt
  • 1/3 Cup Mayonnaise
  • 1 Tbl Soy Sauce
  • 1 Tsp Sesame Oil
  • 1/3 Cup Diced Water Chestnuts
  • 1/3 Cup Shredded Carrot or Diced Carrots
  • 3 Green Onions, Diced
  • 1/4 Cup Finely Chopped Peanuts or Cashews
  • 1-2 Tsp Light Chili Oil
  • 1/2 Tsp Each: Garlic Powder, Black Pepper & Salt

Instructions

  • In a food processor, combine: canned chicken, Greek yogurt, mayo, soy sauce & sesame oil. Blend until: smooth, creamy and is a tuna-like consistency
  • Transfer to a bowl and fold in: water chestnuts, carrot, green onions, chopped nuts, chili oil & seasonings. Mix until evenly combined
  • Chill - highly recommended! It thickens + improves texture. And makes it easier to spread. Refrigerate 15–30 minutes
  • This makes a big bowl. Serve on Pumpernickel Bread, Naan, Tortillas or whatever you enjoy. Each serving size is about 2/3 cup. Enjoy!
