1CupCottage Cheese (You can use Regular, Low Fat or Fat Free)
1/2CupCaesar Dressing (Your Favorite)
1/2CupGrated Parmesan Cheese
1CupShredded Mozzarella Cheese
2ClovesMinced Garlic
Salt & Pepper To Taste
Chopped Parsley, Optional
Instructions
Boil pasta until just al dente. Drain and set aside
In a blender, combine: cottage cheese, Caesar dressing, garlic, parmesan. Blend until completely smooth. No lumps. This is key for the texture.
In a large bowl, mix cooked pasta, canned chicken (keep slightly chunky, not shredded smooth) & blended sauce. Stir until everything is coated
Transfer to a 13 x 9 baking dish that has been coated with cooking spray. Top with mozzarella & extra parmesan. Don’t mix the top—this gives you that melted layer
Bake at 375°F for 20–25 minutes. Broil last 2–3 minutes for golden top
