1TblOlive Oil
1LargeYellow Onion, Halved and Sliced
1Green Bell Pepper, Diced
1Red Bell Pepper, Diced
2ClovesGarlic, Minced
2LbsThinly Sliced Roast Beef
Salt/Pepper To Taste
8OzLow Fat Cream Cheese, Softened
1/2CupFat Free Sour Cream
1/2CupLow Fat Mayonnaise
1.5CupsShredded Provolone Cheese
1.5CupsKraft Fat Free Mozzarella Cheese
1/2CupHalved Cherry Tomatoes, Optional
Shredded Lettuce, Optional
Instructions
Preheat oven to 375°F. In a large skillet, heat olive oil over medium heat. Sauté onion and peppers until soft and lightly browned, about 8–10 minutes. Add garlic and cook 1 more minute.
Stir in roast beef, season with salt and pepper, and cook until browned. Drain excess grease.
In a large bowl, mix together cream cheese, sour cream, mayo, provolone, and mozzarella until well combined.
Fold in the steak mixture and stir until evenly distributed. Spread mixture into a greased 9x13-inch baking dish.
Bake for 20–25 minutes or until hot and bubbly. Optional: Top with lettuce and cherry tomatoes before serving.
