Buffalo Chicken Loaded Baked Potatoes (High-Protein & Fully Loaded)

Ingredients

  • 4 Large Baking Potatoes
  • 2 Cans Canned Chicken (12.5 oz cans) Drained
  • 1/2 Cup Buffalo Wing Sauce (I use Sweet Baby Rays) You will need extra for drizzling
  • 1/2 Cup Ranch Dressing (Can use LowFat or Nonfat) You will need extra for drizzling
  • 1 Cup Crumbled Bleu Cheese
  • 2 Tbl Cream Cheese (Can you Light Cream Cheese)
  • 4 Green Onions, Snipped
  • 1/2 Tsp Each: Garlic Powder & Paprika
  • Salt/Pepper to Taste

Instructions

  • Preheat oven to 400°F. Scrub potatoes, poke holes, add salt. Bake 50–60 minutes until soft inside.
  • In a bowl, combine: canned chicken (keep it chunky) buffalo sauce ranch cream cheese garlic powder + paprika Mix until thick, creamy, and coated (not runny)
  • Warm mixture in a pan over medium heat. Stir until hot and slightly thickened. This should look saucy and chunky, not cheesy or stretchy
  • Slice open potatoes and fluff insides Lightly season Pile the buffalo chicken mixture high
  • Add: blue cheese crumbles, extra buffalo sauce, drizzle light ranch and add green onions
