Ingredients

  • 3 Large Eggs, Separated
  • 1/4 Tsp Cream of Tartar
  • 1/2 Cup Shredded Mozzarella Cheese
  • 1/2 Cup Soft Goat Cheese (not crumbled)
  • 1 Large Jalapeno, Diced Small (Seeds Removed)
  • 1/2 Tsp Garlic Powder
  • Salt/Black Pepper to Taste
  • 1 Tbl Snipped Fresh Chives
  • 1 Tbl Chopped Parsley (Optional)
  • Cooking Spray (Olive Oil or Avocado Oil)

Instructions

  • Whip the Egg Whites
In a clean mixing bowl, beat the egg whites with cream of tartar until stiff peaks form. This creates the signature keto cloud bread structure.
  • Mix the Yolky Base
In a separate bowl, combine egg yolks, mozzarella cheese, goat cheese, diced jalapeño, garlic powder, salt, and pepper. Stir until smooth and well blended.
  • Fold Gently
Gently fold the whipped egg whites into the yolk mixture in two batches. Use a silicone spatula and avoid overmixing — you want the batter airy and fluffy.
  • Preheat the Air Fryer
Lightly spray your air fryer basket or tray with cooking spray. Preheat to 325°F
  • Scoop and Cook
Scoop about 2 tablespoons of the mixture for each puff and drop them onto the tray. Leave space between each so they puff up properly. Air fry for 8–10 minutes, or until golden brown and set.
  • Garnish and Serve
Sprinkle with chopped chives or parsley. Serve warm as a low carb snack for a crowd, part of your keto party snacks lineup, or a fun weekday side.
  • This makes 5 servings with 2 appetizers per person. Enjoy!
