Instructions
Preheat a grill or grill pan to medium-high heat. You can spray the grill or grill pan with vegetable cooking spray.
Season the flat iron steak with salt and black pepper. Grill the steak for 4-5 minutes per side, or until cooked to your desired level of doneness. Remove the steak from the grill and let it rest for 5 minutes.
Meanwhile, in a large bowl, combine the mixed greens, chopped tomatoes, sliced Serrano green chili peppers, and sliced red onion. Mix well.
Slice the grilled steak against the grain into thin strips and add to the mixed greens and vegetables. Toss to combine.
In a small bowl, whisk together the rice vinegar, lime juice, fish sauce, and honey until the honey is dissolved.
Add the minced garlic, chili flakes, coriander, cumin, ginger, salt, and black pepper. Whisk until well combined.
Slowly pour in the olive oil, whisking constantly, until the dressing is emulsified and well blended.
Drizzle the homemade Thai dressing over the salad, and toss to coat evenly. Divide the salad among four plates and serve immediately.
