Ingredients

  • 1 Pound Flat Iron Beef Steak
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Black Pepper Ground
  • 6 Cups Mixed Field Greens
  • 10 Ounces Cherry Tomatoes Halved
  • 2 Serrano Chili Peppers Thinly Sliced
  • 1 Red Onion Thinly Sliced
  • 1/4 Cup Rice Wine Vinegar
  • 2 Tablespoons Fresh Lime Juice
  • 2 Tablespoons Fish Sauce
  • 1 Tablespoon Honey
  • 1 Clove Garlic Minced
  • 1/4 Teaspoon Dried Chili Flakes
  • 1/4 Teaspoon Ground Coriander
  • 1/4 Teaspoon Ground Cumin
  • 1/4 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 1/4 Cup Extra Virgin Olive Oil

Instructions

  • Preheat a grill or grill pan to medium-high heat. You can spray the grill or grill pan with vegetable cooking spray.
  • Season the flat iron steak with salt and black pepper.  Grill the steak for 4-5 minutes per side, or until cooked to your desired level of doneness. Remove the steak from the grill and let it rest for 5 minutes.
  • Meanwhile, in a large bowl, combine the mixed greens, chopped tomatoes, sliced Serrano green chili peppers, and sliced red onion. Mix well.
  • Slice the grilled steak against the grain into thin strips and add to the mixed greens and vegetables. Toss to combine.
  • In a small bowl, whisk together the rice vinegar, lime juice, fish sauce, and honey until the honey is dissolved.
  • Add the minced garlic, chili flakes, coriander, cumin, ginger, salt, and black pepper. Whisk until well combined.
  • Slowly pour in the olive oil, whisking constantly, until the dressing is emulsified and well blended.
  • Drizzle the homemade Thai dressing over the salad, and toss to coat evenly.  Divide the salad among four plates and serve immediately.
  • Per serving on the Weight Watchers Plan, each serving is 12 WW Points.
