Lightened Up Derby Pie | Kentucky Derby Party | Kentucky Derby Food

Ingredients

  • 1 Pillsbury Pet Ritz Deep Dish Pie Shell
  • 2 Large Eggs
  • 4 Tbl Light Whipped Butter
  • 1/2 Cup Lakanto Monkfruit Sweetener
  • 1 Tsp Vanilla Extract
  • 1/2 Cup Whole Wheat Pastry Flour
  • 2 Tbl Bourbon (Optional)
  • 1/2 Cup Dark Chocolate Cacao Nibs
  • 1/2 Cup Pecans, Chopped

Instructions

  • Preheat oven and prepare: Preheat your oven to 325°F (160°C). Prepare your unbaked Pet-Ritz pie shell.
  • In a large bowl, beat the eggs with the melted and cooled butter until smooth.
  • Add the monkfruit sweetener and vanilla extract. Mix until creamy.
  • Add the whole wheat pastry flour and bourbon (if using). Mix until well combined.
  • Stir in the dark chocolate chips (or cacao nibs) and chopped pecans. Pour the filling mixture into the prepared unbaked pie shell.
  • Bake in the preheated oven for 30 to 35 minutes, or until the pie is golden brown and set. Let the pie cool before serving.
