Ingredients

  • 1 16 oz Bag of Frozen Sweet Corn or 4 Ears of Corn on Cob, Shaved
  • .5 Cup Diced Red Onion
  • 1 Large Jalapeno, Seeded & Diced
  • 1/3 Cup Red Pepper, Seeded & Diced
  • 2 Cloves Garlic, Minced
  • 1/3 Cup Fresh Cilantro, Snipped
  • 3 Tablespoons Lime Juice
  • 2 Tablespoons Light Mayonnaise
  • 2 Tablespoons Fat Free Plain Greek Yogurt
  • .5 Teaspoon Chili Powder
  • .5 Teaspoon Ground Cumin
  • .5 Teaspoon Salt
  • .5 Teaspoon Fresh Ground Pepper
  • .5 Cup Cotija Cheese, Crumbled

Instructions

  • Heat a large skillet over medium-high heat. Add the corn kernels and cook, stirring occasionally, until lightly charred, about 5 minutes.
  • In a large bowl, combine the charred corn, red onion, garlic, red pepper, jalapeño, and cilantro.
  • In a small bowl, whisk together the lime juice, light mayonnaise, Greek yogurt,  chili powder, cumin, pepper and salt.
  • Pour the dressing over the corn mixture and toss to coat.
  • Serve the salad warm, topped with more crumbled Cotija cheese if desired.
  • Per serving on Weight Watchers, each serving is 3 WW Points. Enjoy!
