Watermelon Mint Frosé - Weight Watchers Friendly Alcoholic Beverage

Ingredients
  • Bottle of Rosé Wine (750 ML)
  • 2 Pounds of Watermelon Cubes (Seedless)
  • ½ Cup of Monkfruit Sugar Substitute + ½ Cup of Water
  • ¼ Cup of Lemon Juice (Fresh)
  • 10 Mint Leaves
  • Ice Cube Trays
Instructions
  1. Pour the entire bottle of wine into your ice cube trays and freeze until they are solid.
  2. On a parchment paper lined baking sheet, arrange the watermelon cubes so that they don't touch. Freeze these for 3 hours or until they are frozen. When the watermelon cubes are frozen, put them in a freezer bag and seal well.
  3. In a saucepan, combine the Monkfruit Sugar Substitute and the water over medium heat. Stir until the Monkfruit is dissolved in the water. Add in the mint leaves and bring to a boil. Once it boils, turn off the heat and let the mint leaves steep for 20 minutes.
  4. Using a strainer, strain the syrup into a bowl and throw the mint leaves away. Let the syrup cool and then refrigerate it until you want to make the drink.
  5. Combine the Rosé ice cubes, frozen watermelon cubes, Monkfruit syrup and lemon juice into a blender. Blend until it's a creamy and frothy. Pour and serve. Makes about 5 glasses.
