Weight Watchers Chicken Cordon Bleu Soup

Ingredients
  • 2 Tablespoons of Land O Lakes Whipped Butter
  • 2 Teaspoons of Olive Oil
  • 1 Head of Cauliflower, Chopped Coarsely
  • Medium Onion, Chopped
  • Garlic Clove, Minced
  • 4 Ounce Jar Pimento, Drained
  • 3 Tablespoons of All Purpose Flour
  • 2 Cups of Fat Free Chicken Broth
  • 2 Cups of Shredded Cooked Chicken (White Meat)
  • 1.5 Cups of Fat Free Half & Half
  • 1 Cup of Finely Chopped Lean Ham, (Cooked)
  • 1 Tablespoon of Dijon Mustard
  • Salt & Pepper to Taste
  • 2¼ Cups of Shredded Kraft Fat Free Cheddar Cheese
  • Vegetable Cooking Spray
Instructions
  1. Spray a large saucepan with vegetable cooking spray and place over medium high heat. Add in whipped butter and olive oil. When butter is melted, add in cauliflower and onion. Cook while stirring for 10 minutes. Add garlic and pimento in and cook 2 minutes longer. Stir in flour and blend well. Gradually whisk in chicken broth. Bring to a boil while stirring and cook until cauliflower is fork tender - about 15 minutes.
  2. Puree soup using an immersion blender or regular blender. If you choose to puree in a regular blender, make sure soup is slightly cooled and puree soup in batches. Return to large saucepan. Stir in chicken, half and half, ham, mustard and salt and pepper. Heat through. Add in cheese and stir until melted through.
  3. This makes 6 servings (about 10 ounces each). On WW Personal Points, if you chose chicken as a 0 Point Food, each serving is 5 PP. If you didn't chose chicken as a 0 Point Food, each serving is 6 PP.
