Sparkling Melon Lemonade

  • 1 Cup of Granulated Splenda
  • 1 Cup of Cold Water
  • 2 Cups each of Seedless Cubed Watermelon and Cubed Cantaloupe
  • 1 Cup of ReaLemon Lemon Juice
  • 6 Cups of Club Soda
  • Lemon Slices
  1. In a saucepan, combine Splenda and cup of water together and mix well.
  2. Bring to a boil and mix well until Splenda is well dissolved. Let cool. Then chill until very cold about 3 hours.
  3. In a food processor or blender, process watermelon and cantaloupe until smooth.
  4. Pour through a fine mesh strainer and press on any solids to remove more juice. Discard solids.
  5. Stir chilled syrup, watermelon/cantaloupe juice and lemon juice in a large pitcher and chill until ready to serve
  6. Right before serving, add club soda to chilled juice mixture.
  7. Serve over ice and additional lemon slices. Makes about 8-10 servings at 0 SmartPoints on the Blue, Green & Purple PLans.
  8. It is best to make this the day before you are going to serve it so it's nice and chilled.
