Spray a wok or large saute pan with vegetable cooking spray.
When pan is very hot, add in olive oil. Reduce heat to medium and add in sliced peppers, frozen snow peas, white part of green onions, peas and sugar snap peas. Saute until softened - about 5 minutes.
Add in shrimp and cook for another 5 minutes or until shrimp is pink and opaque.
Add in sesame seeds, soy sauce and white wine. Stir to combine and serve.
