Weight Watchers Air Fryer Fried Eggplant

Ingredients
  • 1 Large Egg + 1 Egg Yolk
  • ½ Cup Each Kraft Reduced Fat Parmesan Cheese + Toasted Wheat Germ
  • ½ Teaspoon Each Dried Oregano, Dried Basil, Dried Parsley, Onion Salt + Garlic Salt
  • Large Eggplant
  • Vegetable Cooking Spray

Instructions
  1. Preheat air fryer to 400 degrees.
  2. Whisk egg and egg yolk together and set aside.
  3. In another bowl, combine parmesan cheese, wheat germ and all seasonings.
  4. Slice the eggplant into ¼" thick slices. Dip slices in egg mixture and then into the parmesan cheese mixture.
  5. Spray air fryer basket with vegetable cooking spray.
  6. Working in batches, arrange eggplant slices in a single layer in the air fryer basket and spray the tops of the eggplant slices lightly with vegetable cooking spray.
  7. Cook for 5 minutes and flip to the other side. Spritz this side with cooking spray as well and cook for an additional 4-5 minutes.
  8. I got 8 slices from my eggplant which serves 4 people at 2 slices per person.
  9. On the WW Personal Points Program, if you chose eggs as a 0 Point Food, each serving is 3 PP. If eggs are NOT a 0 Point Food, each serving is 4 PP.
