Ingredients
32 oz Chicken Broth
1 Ounce of Dry Pastina
3 Tablespoons of Fresh Lemon Juice
Salt/Pepper to Taste
¼ Teaspoon of Dried Oregano
1 Cup of Shredded Cooked Chicken Breast
Fresh Parsley (Garnish)
Fat Free Greek Plain Yogurt (Topping)
Instructions
Put chicken broth in a large saucepan and bring to a boil. Add pastina. Cook until softenend to taste - about 5-7 minutes. Add salt/pepper to taste and oregano.
In a separate bowl, add eggs and lemon juice and whisk until smooth.
Take out ½ cup of hot broth and add that into egg bowl and stir together to blend. Dump this mixture into saucepan and continue to simmer until broth begins to thicken - about 2 minutes. Add in chicken and stir it into the broth until heated through. Garnish with fresh parsley and fat free Greek plain yogurt.
