Want a 0 Point hearty protein packed soup? Here it is - Tacchino Zuppa di Toscana. You can easily switch out the white turkey meat for chicken breast and best of all, this soup freezes beautifully. This can also be made in a slow cooker after sauteing the vegetables in a saute pan.This soup makes (8) 1 cup servings.
Ingredients
3 Garlic Cloves, minced
1 Red Onion, minced
1 Cup Celery & Carrots, chopped small
32oz Container of Chicken Broth
1 15oz Can of Pumpkin (Solid Packed - not pie filling)
1 15oz Can of White Beans (Cannellini) (rinsed and drained)
3 Cups of Cooked White Turkey Breast (cubed)
Pinch of Dried Basil
Pinch of Dried Parsley
Salt & Pepper to taste
Nonstick Cooking Spray
Instructions
Spray a large saucepan pan with nonstick cooking spray and place on medium heat.
Saute garlic, onion, celery, carrots and/or parsnips until tender.
Add all remaining ingredients and simmer on low heat for 1 hour.
*This can also be made in a slow cooker. First saute all vegetables in a saute pan. Then add all the ingredients together in a slow cooker for about 1 hour on a medium heat setting.
