Watermelon Granita

  • 1 Cup each Swerve Granulated Sugar Substitute + Water
  • 8 Cups of Cubed Seedless Watermelon
  • 2 Tablespoons of Sweet Riesling Wine OR White Grape Juice
  1. To make the sugar syrup, bring water and Swerve Granulated Sugar Substitute to a boil in a saucepan. Stir until Swerve is dissolved. Cool.
  2. In a blender or food processor, pulse the watermelon cubes, sugar syrup and wine or grape juice in batches until smooth. Transfer to a 8" square dish and put into the freezer for 1 hour, stirring every 30 minutes, until frozen 2-3 hours longer. Before serving, scrape with a fork.
  3. Makes about 10 - ½ cup servings at 0 Freestyle Points. Enjoy!
