Chicken Chow Mein

Ingredients
  • 8 oz of Banza Spaghetti Noodles*
  • 1 Tablespoon of Sesame Oil*
  • 1.5 Pounds of Boneless Skinless Chicken Breasts, Cut into 1" pieces
  • ½ Teaspoon Each of Salt & Pepper
  • 2 Cloves of Minced Garlic
  • 1 Teaspoon of Ground Ginger
  • 1 Carrot, Peeled and Grated
  • ½ Cup of Frozen Peas
  • Cup (1) of Bagged Coleslaw Mix
  • ¼ Cup Each of Soy Sauce + Chicken Broth + Oyster Sauce*
  • 3 Green Onions, Sliced Thin
  • Vegetable Cooking Spray
Instructions
  1. Cook pasta noodles according to directions. Drain and set aside.
  2. Spray a large skillet with vegetable cooking spray and place over medium high heat. Add oil. Season chicken with salt and pepper. Add chicken to skillet and cook until golden - about 10 minutes. Move chicken to 1 side of skillet and add in garlic, ginger, carrot, peas and coleslaw mix. Cook for about 5 minutes.
  3. In a medium bowl, combine broth, soy and oyster sauce. Whisk together.
  4. Pour sauce into skillet and add in spaghetti noodles. Combine well. Garnish with green onion.
  5. This makes 4 servings at 6 Freestyle Points. Enjoy!
