General Tso's Chicken

Ingredients
  • 1.5 Lb of Boneless Skinless Chicken Breasts, Cut into 1" pieces
  • ⅛ Cup of Cornstarch
  • ½ Teaspoon of Kosher Salt + Fresh Cracked Black Pepper
  • Vegetable Cooking Spray
  • 2 Teaspoons of Sesame Oil*
  • ¼ Cup of Soy Sauce
  • ¼ Cup of Fat Free Chicken Broth
  • 2 Tablespoons Each of Hoisin Sauce* + Nature's Hollow Sugar Free Honey Substitute*
  • 2 Tablespoons of Sweet Thai Chili Sauce*
  • 1 Tablespoon of Cornstarch
  • 3 Green Onions, Snipped
  • Cooked Cauliflower or Broccoli Rice
Instructions
  1. Combine chicken, ⅛ cup of cornstarch, salt and pepper in a plastic bag. Close and shake to coat.
  2. Spray a large saucepan with vegetable cooking spray and place over medium high heat. When pan is hot, add in sesame oil. Shake off cornstarch and add chicken to the pot. Fry until golden and cooked through - about 7 minutes.
  3. In a small pot over medium heat, combine soy sauce, chicken broth, hoisin sauce, honey substitute and chili sauce. Add cornstarch and simmer until thickened - about 5 minutes.Pour sauce into pot containing the chicken and stir until coated.
  4. Serve over cauliflower or broccoli rice. Sprinkle with snipped green onions on top.
  5. This makes 4 servings at 3 Freestyle Points per serving; 2 large servings will be 5 Freestyle Points per serving. Enjoy!
