Ingredients
  • 1 Pound of Fresh Ripe Strawberries, Hulled and Sliced or Quartered
  • 2 Teaspoons of Swerve Granulated Sweetener Alternative
  • 15 oz Carton of Whole Milk Ricotta
  • 3 Tablespoons of Nature's Hollow Honey Substitute
  • ½ Teaspoon Each of Vanilla Extract + Lemon Zest
Instructions
  1. In a bowl, combine sliced strawberries and Swerve. Let it stand for about 20 minutes or longer (until berries have softened and they are getting juicy).
  2. In a medium bowl, beat all the remaining ingredients with a mixer for about 2 minutes.
  3. To assemble in parfait glasses, place about 2 tablespoons of the ricotta mixture into the bottom of 6 parfait glasses. Top each with a large spoonful of the strawberry mixture. Repeat layers. Serve immediately or cover and chill up to 4 hours.
