Zucchini Egg Casserole

  • Medium Zucchini, Slice into thin rounds
  • 1 Medium Onion, Chop Small
  • 8 Eggs
  • ½ Cup Fat Free Half & Half
  • Salt/Pepper to Taste
  • 2¼ Cups of Kraft Fat Free Shredded Mozzarella CheeseĀ 
  • Butter Flavored Cooking Spray
  1. In a large bowl, combine onion, eggs, fat free half & half, 1 cup of cheese and salt/pepper to taste.
  2. Spray a 8 x 8 square baking dish well with butter flavored cooking spray.
  3. Pour egg mixture into baking dish, sprinkle remaining cheese on top. Add zucchini slices on top of cheese. Sprinkle with additional salt/pepper to taste.
  4. Preheat oven to 350 degree oven. Bake for 20 minutes until eggs are set. To check if eggs are set, slide the tip of a knife into the middle of the eggs. If knife comes out clean, remove from oven.
  5. Cut into 4 slices. This serves 4 people at 2 Freestyle Points per serving. Enjoy!
