Creamy Chicken Tomato Skillet

Ingredients
  • 1 Tablespoon of Olive Oil
  • 2 lbs Boneless Skinless Chicken Breast Tenderloins
  • Salt/Pepper to Taste
  • 2 Cups of Cherry or Grape Tomatoes, Halved
  • 2 Cans (4 oz) of Sliced Mushrooms
  • 3 Garlic Cloves, Minced
  • 2 Cups Fat Free Chicken Broth
  • 2 Tablespoons of All Purpose Flour
  • ¼ Cup of Fat Free Half & Half
  • Bunch of Snipped Fresh Parsley
  • Olive Oil Cooking Spray
Instructions
  1. Spray a large skillet with olive oil cooking spray over medium high heat. When pan is hot, add in olive oil. Sprinkle chicken with salt/pepper to taste. Add chicken to skillet to brown - about 12 minutes. Flip chicken a few times. Add in tomatoes, mushrooms and garlic. Cook, stirring until tomatoes begin to soften, about 3 minutes.
  2. Whisk together broth, flour and ½ and ½ until combined. Add to chicken mixture. Bring to a boil. Cook, stirring until sauce thickens - about 5 minutes.
  3. Sprinkle with fresh parsley and serve.
