This makes about 1 and ⅔ cups of curd. For 5 servings, each serving is about ⅓ cup and 2 Net Carbs, 0 Fiber, 14 Grams Fat, 5 Grams Protein and 175 Calories.
Ingredients
  • 1 Cup Pure Erythritol
  • Tablespoon of Lemon Zest
  • ½ Cup of Lemon Juice
  • Teaspoon of Salt
  • 3 Large Eggs
  • 3 Egg Yolks
  • 4 Tablespoons of Cold Unsalted Butter, Cut Small
Instructions
  1. Whisk Erythritol, lemon zest, lemon juice and salt in a medium saucepan. Whisk the whole eggs and yolks in a small bowl, then whisk into lemon mixture.
  2. Cook mixture over medium heat, whisking constantly, until it resembles pudding, 6 to 8 minutes. Remove from heat and whisk in butter a few pieces at a time until incorporated.
  3. Strain mixture through a fine mesh sieve into a small bowl, pushing it through with a rubber spatula. Press plastic wrap directly onto surface to prevent a "skin" from forming.
  4. Refrigerate for at least 4 hours and this will keep in the refrigerator for up to five days.
  5. Serve with Creamy Crepes Recipe. Enjoy!
